Special low-pressure faucets are needed if the tap is connected to a boiler or hot water tank (usually mounted under the kitchen worktop). More infos here:

Information on kitchen faucets:
There is hardly an item in the house that is used as often as a kitchen faucet:
Up to 100x per day water is needed for coffee or tea, for cleaning food, doing the dishes and other things. Thus, kitchen faucets have to to be able to cope with a heavy workload - and that over many years!
The bodies of modern kitchen faucets are made of high-quality finished, solid brass: Brass is extremely robust, non-corrosive and free of emissions - which is especially important for the drinking water. Unfortunately, raw brass does not look very pretty, so it is usually chrome-plated. This plating is not only responsible for the shininess of a faucet - it also protects against scratches because of it's hardness. But this can only be guaranteed if the plating is done poperly and thick enough - cheap manufacturers try to save a lot of money here. Possible consequences of this could be: Scratches, cracks and flaking; and, in worst case - if the base of the kitchen tab is of a really bad quality - corrosion.
The mechanical components of a kitchen tap must be designed for highest komfort and best durability as well.
While the valves to control the water flow have been build with rubber seals in the past, discs made of high-tech ceramics do the job nowadays. They are extremely hard and even (to avoid dirt residues) - and they are the reason why it is possible to get the optimal sealing effect with a minimum of effort.
While you are cooking, you often have only one free hand to work with. Therefore, taps with a single-lever control have to be prefered to those with separate controls for hot and cold water. Also, the faucet should be high enough to allow easy filling of bottles or buckets - and the controls should work smoothly and easy for a convenient usage.
Two more criteria you should consider when buying a kitchen faucet are:
The kitchen faucet's water outlet has to be swivel-type to allow you to target the water at the point you need it.
And: Some taps do have an extendible hose that is a great help while cleanig food, doing the dishes or filling buckets!
Low-pressure faucets:
Not only in older kitchens, boilers are still in use - especially those hot water tanks attached below the sink.
To properly connect these tanks with your tap, you need a special type of faucet with three instead of two connection hoses!
These tanks can not withstand the full water pressure of your water pipes, and the third connection of the faucet controls water flow from pipe to tank. That way, the tank is not constantly under pressure - and that's why these taps are called "Low pressure faucets".
